Home Fries

These home fries are a great way to start off any morning. Just chop up all the ingredients and throw them in the oven; it's as simple as that. The pepper and the paprika give these fries a nice kick and the rosemary also adds great flavor to this dish. Enjoy!

1 pound of red new potatoes

1 small onion

Half of a red bell pepper

1/2 teaspoon dried rosemary

1/2 teaspoon paprika

2 tablespoons of vegetable oil

salt and pepper

1. Preheat oven to 375 degrees. Chop your ingredients. The potatoes should be cut into bite sized pieces and the onions should be finely chopped. Cut the bell pepper into a brunoise, or a very fine dice. To do this first cut the pepper into thin strips or julienne. Then line the strips side by side and run your knife through creating small pieces (see below).

2. Put chopped ingredients into a medium bowl. Add rosemary, paprika and salt and pepper. Add the vegetable oil and toss to coat.

3. Put the potato mixture into a rimmed baking sheet. Bake until potatoes are tender; about 40 minutes. Serve with eggs and bacon to create the perfect breakfast!
